Hot Sauce Pearls

Hot Sauce Pearls (recipe works with both Frank’s Red Hot Sauce and Sriracha Sauce by Huy Fong Foods)

  1. Blend 0.5 tsp of sodium citrate in 200mL water
  2. Mix 1 tsp sugar with 1 tsp sodium alginate
  3. With blender on low speed, add sugar/alginate mix to water/citrate mix
  4. Slowly add 60mL hot sauce while continuing to mix
  5. Add to Spherificator
  6. Create calcium bath in a separate bowl (1 tsp Calcium Chloride in 500mL water)
  7. Spherificate!
  8. Rinse and serve
