Strawberry Pearls from Purée
- Dice about 4-5 fresh strawberries
- Add sugar to taste, if desired
- Add 25 mL of water and blend until completely puréed, removing all chunks
- Blend 200mL of the fresh strawberry purée with 100mL water
- Blend in 1 tsp sodium alginate
- Pour in Spherificator
- Create calcium bath in a separate bowl (1 tsp Calcium Chloride in 500mL water)
- Spherificate!
- Rinse and serve
